Tomato Soup Recipe: From the Blue Osa Kitchen
Gluten-free | Vegan-friendly | Serves 4
Ingredients
- 10–12 medium ripe tomatoes
- 4 cloves of garlic
- 1 medium carrot
- 2 stalks of celery
- 1 onion
- 5–6 fresh basil leaves
- 1 teaspoon sugar
- 1 teaspoon butter
- ½ teaspoon oil
- Salt and pepper to taste
Preparation
- Cut tomatoes into quarters
- Peel and finely chop garlic
- Peel and cut carrots into rough pieces
- Cut celery into rough pieces
- Peel and slice onion
- Roughly tear or cut basil leaves
Directions
- Heat oil and butter together in a large pot over medium heat.
- Add garlic and onion and sauté until soft and fragrant, about 3 to 4 minutes.
- Add carrots and celery and cook for another 3 minutes, stirring occasionally.
- Add the quartered tomatoes and sugar. Stir to combine.
- Season with salt and pepper, cover, and simmer on low heat for 20 to 25 minutes until all vegetables are completely soft.
- Remove from heat and add the fresh basil leaves.
- Using an immersion blender or transferring carefully to a standing blender, blend until smooth and creamy.
- Taste and adjust seasoning as needed. Serve hot.
