Original Star fruit Jam Recipe from Blue Osa

Star Fruit Jam is one of our favorite recipes to make here at Blue Osa. Today we're sharing our recipe with you! If no star fruit, pineapple can be used.

  • big pot (for cooking the jam)
  • large stirring spoon
  • measuring cup
  • Cutting board
  • Knife


  • 8 1/2 cups fresh start fruit if you do not have star fruit, you may substitute with pineapple
  • 3 cups sugar if you are using pineapple, use less sugar
  • 1 ounce vanilla
  • 1/2 tsp cardamon
  • 1/2 tsp cinnamon you can add more if you like cinnamon
  • Rind of one lemon or 1 Tablespoon of grated ginger (optional)


  •  Thoroughly wash fruit
  • Cut the fruit:
    1. Cut off the ends.
    2. Cut the peaks of each ridge on the fruit.
    3. Slice around the core.
    4. Cut off any remaining core. Last, slice into long pieces.
  • Put all the fruit into the pot. Have the heat at medium high. Stir the fruit until it begins to have a mushy texture.
  • Add vanilla
  • Add cardamon
  • Add cinnamon
  • Continue stirring until you get a nice simmer going on.
  • Add the sugar
  • Turn the heat up and bring to a boil. CONTINUE TO STIR. If you stop stop stirring, you may burn the jam.
  • Keep the boil for about 5 - 10 minutes. (you will need to turn the heat down a bit.)
  • Now turn the heat off, cover the jam, and leave it over night on the stove.
  • The next day, bring the jam to a boil.
  • After the jam is brough to a boil, lower the temperature and simmer one hour (or until liquid is evaporated), stirring occasionally.

      The starfruit should be yellow / orange, not green. But how ripe? As ripe as you can find them. But it will be more difficult unless you have your own tree.

  1. Hello, I would like to know if during the 4 days that the jams rest I need to put them in the fridge. Thanks!

  2. No where in the instructions does it say where and when to add the 3 cups of sugar! Since all the other ingredients are added and then put in the fridge to rest overnight, I will assume the sugar goes in at the same time.

  3. This sounds easy enough and yummy. Does it just make one pint jar or do I need more? I want to sterilize the jars ahead of time.

  4. Should these jars be refrigerated to keep them from spoiling? Do you can the jam? What keeps it from spoiling?

  5. I have to say I was a little impatient making this jam as I couldn’t wait for the starfruit to ripen. So I made it with a mix of ripened star fruit and some yellow and green. It was delicious. Now I have my own tree so for the next batch I will wait and try and be patient! Thank you for sharing
