Homemade Star Fruit Jam Recipe
From the Kitchen of Blue Osa
Gluten free + vegan
Ingredients:
- 8 1/2 cups of fresh star fruit (you can substitute pineapple)
- 3 cups of sugar
- 1/8 cup of vanilla
- Rind of one lemon or 1 Tablespoon of grated ginger (optional)
- 1 pinch of Cardamom (optional)
How To Prepare Star Fruit Jam
1. Thoroughly wash fruit
2. Cut the fruit: First, cut off the ends. Second, cut the peaks of each ridge on the fruit. Third, slice around the core. Fourth, cut off any remaining core. Last, slice into long pieces.
3. Add vanilla
4. Add Cardamom (optional)
5. Add lemon or grated ginger (optional)
6. Stir until all ingredients are incorporated
7. Cover and let rest overnight
8. Blend until smooth
9. In a large pot bring mix to a boil
10. Lower the temperature and simmer one hour (or until liquid is evaporated), stirring occasionally
11. Put in recycled jar(s) and seal tightly
12. Let star fruit jam rest for 4 days before opening and eating

Do the fruit need to be ripe or really ripe for the jam

The starfruit should be yellow / orange, not green. But how ripe? As ripe as you can find them. But it will be more difficult unless you have your own tree.

No where in the instructions does it say where and when to add the 3 cups of sugar! Since all the other ingredients are added and then put in the fridge to rest overnight, I will assume the sugar goes in at the same time.

This sounds easy enough and yummy. Does it just make one pint jar or do I need more? I want to sterilize the jars ahead of time.
Should these jars be refrigerated to keep them from spoiling? Do you can the jam? What keeps it from spoiling?
My suggestion is to always keep jam in the fridge, or a really really cool place. Like a pantry.

I have to say I was a little impatient making this jam as I couldn’t wait for the starfruit to ripen. So I made it with a mix of ripened star fruit and some yellow and green. It was delicious. Now I have my own tree so for the next batch I will wait and try and be patient! Thank you for sharing

If the fruit is still green, you can use it for jam. But if you wanted to ripen it, leave it out on the counter for a day or two.

Do not add water Ingrid. You will find that star fruit has a lot of natural water in it.
