Passion Fruit Pie
Ingredients:
3/4 cup butter cookies, crushed
3/4 stick butter, melted
1 3/4 oz. condensed milk
1 3/4 oz. coconut cream
1 cup dry, un-sweetened coconut flakes
3 passion fruits, blended
3 eggs
Preparation:
Preheat oven to 350F.
Crust
In a mixing bowl combine crushed butter cookies and melted butter until moist. Press the mixture firmly into a 12-inch springform pan. Set aside.
Filling
Combine condensed milk, coconut cream, dry coconut, passion fruit, and eggs in a blender and pulse the mixture until thoroughly incorporated. Pour over crust. Bake for 30 minutes at 350F or until set, checking halfway.
