Blue Osa’s Italian Style Fried Eggplant

Savory and delicious, this Blue Osa favorite is sugar-free, vegetarian and will leave your mouth watering for more. Packed full of minerals and vitamin A, B and C, eggplants are fat-free and have only 35 calories in a cup. Eggplants make an excellent choice for a healthy and flavorful dinner.

  •  4 large Eggplant
  •  ½ tsp.Cumin
  • 2 tbsp. Vegetable oil
  • ½ tsp. Paprika
  • ½ tsp. Curry½ tsp. Salt
  • 2 pinches Black pepper
  • 2 cups Flour
  • ½ cup Milk
  • 2 Eggs
  • 1 cup Cheese
  • 3 pinches Red pepper, use to taste



Preheat oven to 250F.

Thinly slice eggplant and set aside.  Mix flour, cumin, paprika, curry, salt in a bowl. Gently blend eggs and slowly incorporate into flour mixture. Dip eggplant into the egg mixture, evenly coating both sides of the eggplant.

Heat vegetable oil to approximately 330F in a large frying pan. Fry each eggplant slice until golden brown on each side. Place fried eggplant slices on a baking sheet, adding cheese and a sprinkling of the red pepper.

Place the eggplant in the oven at 200 degrees for 15 minutes or until cheese is melted.
