Hearty Vegetarian soup

Warm up with this nutritious and delicious vegetable soup.  Enjoy it by itself or serve alongside of your favorite main course.  Perfect for warming up on a chilly night!

Hearty Vegetable Soup

From the Kitchen at  Blue Osa
Gluten free, vegan, & sugar-free

Ingredients:

2 cups cooked squash
2 cups cooked chayote
2 cups cooked garbanzo beans
1 diced onion
1 diced head of garlic
1 cup chopped cilantro
1 liter of water
salt and pepper to taste

Preparation:

1. Put all the ingredients into a large pot
2. Bring to a boil
3. Reduce heat to a simmer and cover for one hour
4. Remove from heat and let cool
5. Blend until smooth
6. Return to a brief boil
7. Serve warm
