Chocolate Salad Dressing
From the kitchen of Blue Osa

1-ounce dark melted chocolate (preferably organic, dark raw Costa Rica Cacao)
1/2 cup of cold-pressed (organic) olive oil
2 tablespoons of water
2 tablespoons balsamic vinegar
2 tablespoons rice wine vinegar
1 teaspoon organic minced garlic
1 teaspoon of sea salt
Ground pepper to taste
Pour olive oil into a mixing bowl. Slowly whisk in the vinegar to create an emulsion. Add garlic. Make sure emulsion is at room temperature. Pour in melted dark chocolate, even more slowly, whisking to incorporate the chocolate into the emulsion. Add salt and pepper to taste. Pour on your freshest most beautiful vegetable salad and ENJOY!
