Blue Osa’s famous Star Fruit Crisp

Blue Osa’s most infamous and frequently requested dessert, Star Fruit Crisp is both healthy and decadent. Blue Osa is blessed with 3-star fruit, also known as carambola, trees that bear fruit 4 times a year. Star fruit is a low-calorie tropical fruit that’s high in Vitamin-C. In this delicious treat, we layer a savory crumble with exotic star fruit and top it off with a tangy cream. Blue Osa’s Famous Star Fruit Crumble is sure to please any crowd no matter the occasion!

Ingredients:

Filling:

8 Star Fruit (cleaned, trimmed and sliced)
1 cup Sugar
8 cups Water
1 Cinnamon Stick
 

Crumble:

6 tbsp. of All Purpose Flour
¼ cup Brown Sugar
¼ cup Sugar
¼ tsp. Ground Cinnamon
¼ tsp. Ground Nutmeg
¼ tsp. Salt
5 tbsp. Butter, preferably from the freezer
¾ cup Chopped Almonds – optional
 

Preparation:

 
Beginning with the star fruit filling, combine water, sugar and cinnamon stick in a large pot and bring to a boil. Blanch the slices of star fruit in the sugared water until the fruit is tender. Remove the fruit and set aside. Of the remaining liquid, use 3 cups and over high heat reduce to 1 ½ cups. Line the bottom of the baking dish* with fruit and remaining liquid.

To prepare the crumble, blend flour, sugars, spices, salt and nuts. Cut in butter using fingers until consistency is sandy. (If living in the hot and humid jungle use a food processor so that your butter does not instantly melt.) Sprinkle the mixture over the star fruit and liquid. Bake at a 350 degree oven until golden brown and sides bubble. Remove and allow to cool. Top with your choice of creamy delight.

* This dessert can easily be made in one large baking dish, or in smaller individual dishes. Baking time for larger dish is 30-35 min and 12- 15 for smaller.
