This is one of our favorite lunch staples at Blue Osa. It’s light, yet filling and flavorful. It makes for the perfect vegetarian option during the summer season when zucchini grows bountiful in the garden. Paired with a salad and a piece of warm bread it can also be served for a light supper. Or try it for breakfast, why not?
Blue Osa Zucchini Flan

Gluten Free & vegetarian
1 lb. zucchini, cut into 1/2 moons
1/2 c. sour cream
3 Tbs. flour
1/4 t. baking powder
1/2 t. curry powder
1 c. feta cheese, cut into cubes
1/4 c. parmesan cheese
3 cloves garlic, chopped fine
1 Tb. olive oil
