Nearly every morning (except when we serve traditional Costa Rican gallo pinto), our chefs bake fresh, homemade bread to accompany tropical fruit and made-to-order eggs. Unless a guest requests a dairy-free option, butter plays a starring roleโboth as an ingredient in our breads and served generously on the side.
Why serve butter at a health-focused yoga retreat? Simple: because the facts about butter tell a very different story than many people expect.
The Real Facts About Butter
Butter is a nutrient-dense food that offers several health benefits when consumed in moderation. Hereโs what makes butter a worthy addition to a balanced diet:
- Rich in essential vitamins: Butter contains fat-soluble vitamins A, D, E, B12, and K2, all vital for immune function, bone health, and energy metabolism.
- Loaded with beta-carotene: This antioxidant helps lower cancer risk and supports eye health by slowing age-related macular degeneration.
- Supports strong bones: The calcium in butter contributes to bone density and helps prevent osteoporosis.
- Promotes healthy skin: Butter provides vitamin E, which reduces inflammation, protects against UV damage, and speeds wound healing.
- Boosts collagen production: Butter contains boric acid, which plays a key role in collagen formation, essential for skin elasticity and repair. Ancient cultures, including the Egyptians and Tibetans, even used butter as a natural skin moisturizer!

One common (and disturbing) observation: margarine is so chemically stable that even flies and mold avoid it. It doesnโt rot, decompose, or attract pestsโclear signs that itโs far from a whole, natural food.
