Also known as carambola fruit, these tropical gems produce juicy, vitamin-rich fruit up to four times a year—making them a staple in our retreat kitchen and a delicious symbol of our connection to the land.
One of the most beloved dishes to emerge from our Costa Rican kitchen is this unforgettable starfruit crisp. Sweet, slightly tart, and topped with a spiced almond crumble, it’s a dessert that satisfies and nourishes. Whether you’re savoring it after a day of yoga or baking it at home for loved ones, this carambola dessert will transport you to the shores of the Osa Peninsula.
Why Starfruit (Carambola) is the Star of the Show
Starfruit is a tropical fruit that’s low in calories and high in vitamin C, antioxidants, and fiber. With its star-like shape and refreshing citrus flavor, it’s as visually stunning as it is healthful. You may know it as carambola star fruit or simply starfruit—either way, its unique taste and nutritional benefits make it a must-try ingredient.
Ingredients for the Starfruit Filling
- 8 ripe starfruit (cleaned, trimmed, and sliced)
- 1 cup sugar
- 8 cups water
- 1 cinnamon stick
Ingredients for the Crumble Topping
- 6 tbsp all-purpose flour
- 1/4 cup brown sugar
- 1/4 cup sugar
- 1/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 5 tbsp butter (preferably from the freezer)
- 3/4 cup chopped almonds (optional)
How to Make Starfruit Crisp
1. Prepare the Starfruit Filling
In a large pot, combine the water, sugar, and cinnamon stick, and bring to a boil. Add the starfruit slices and blanch until tender. Remove the fruit and set it aside. From the remaining liquid, use 3 cups and reduce over high heat to 1 1/2 cups.
2. Assemble the Dessert
Line the bottom of a baking dish with the softened starfruit slices and drizzle the reduced liquid over them.
3. Make the Crumble Topping
In a bowl, blend together the flour, sugars, spices, salt, and nuts. Using your fingers (or a food processor if you’re in a warm climate), cut in the cold butter until the mixture resembles coarse sand. Sprinkle the crumble over the fruit.
4. Bake and Enjoy
Bake at 350°F (175°C) for 30–35 minutes if using a large baking dish or 12–15 minutes for smaller individual dishes. The edges should be bubbly and the top golden brown. Let cool and top with your favorite creamy delight—coconut whipped cream is a Blue Osa favorite!
