Rich, creamy and zesty, Marie’s Mexican Guacamole Dip will have you licking the bowl. Avocados, the main ingredient in this recipe, offer a wealth of health benefits and have even been referred to as the world’s most perfect food! Avocados are full of healthy fats and provide close to 20 essential vitamins and nutrients including fiber, potassium, B-vitamins, vitamin E and folic acid, just to name a few. From the Kitchen of Blue Osa
Mexican Guacamole Dip
2 Avocados, peeled and pitted
Juice of 1 lemon
2 tbsp. Red onion, minced
2 tbsp. Cilantro, minced
1 clove Garlic, minced
½ Tomato, diced
Pinch of Cayenne pepper or Tabasco
Salt to taste
Mash avocado with a fork in a small bowl. You can use a food processor if you desire a smoother texture but here at Blue Osa, we like our Guacamole a little chunky. Gently fold in chopped garlic, cilantro, tomato, onion, lemon and tabasco until well distributed. Transfer dip to an airtight container, preferably glass or plastic to avoid speeding oxidation, and refrigerate for at least one hour prior to serving.
Just a couple of tips:
1. To preserve the bright green color of a fresh avocado, save the pit of one avocado and store it in the same container with your guacamole. This will also help slow oxidization.
2. Once you’re comfortable preparing this recipe, you can adjust your proportions of tomato, garlic, cilantro, onion, pepper and tabasco to suite your taste.
