Blue Osa’s Pineapple Jam

As Blue Osa is a renowned yoga retreat and spa, we immerse our guests in ancient yogic traditions and practices in every aspect of the Blue Osa experience. One of these traditions is pranic eating, which is the foundation of why farm-to-table eating is as important (if not even more so) than practicing yoga itself as the energy of a particular food and how it affects your life force is the basic principle behind pranic foods.

Pranic farm-to-table eating is a way of life at Blue Osa so we can nourish our guests with the freshest and most positive pranic fruits and vegetables that are grown right on our property. One of our favorite homegrown fruits is the pineapple. We have a pineapple patch that produces a bounty of pineapples twice a year. Witnessing the growth and harvesting of this tropical treasure truly makes one appreciate the blessings of mother earth.

In addition to the sweet and zesty tropical flavor, pineapples are packed with tons of vitamins and minerals which is why pineapples are a staple on Blue Osa’s menu. One of our favorite recipes that doubles as a great way to preserve the sweetness of this fruit is our pineapple jam. We enjoy sharing this delicious jam with our guests as a nutritious topping for pancakes and freshly baked bread. You could also top off your fish and chicken dishes with a sweet and zesty punch of pineapple!


Recipe

Blue Osa’s Pineapple Jam

From the Kitchen of Blue Osa
Gluten-free, fat-free, and vegan

Makes approximately 4 jars

Ingredients:

  • 7 cups of pineapple chunks
  • 3 ½ cups of granulated white sugar
  • 1 Tablespoon vanilla
  • 1 Pinch of cinnamon
  • Zest of one lemon

Preparation

1. Clean and chop pineapple into medium pieces
2. Mix in a large bowl with the sugar, vanilla, and cinnamon and marinate 2 hours at room temperature
3. Transfer the mix into a heavy-bottomed stock pot, and let simmer for 1½ to 2 hours over very low heat
4. While the pineapple cooks prepare your jars by placing them in boiling water for 2 minutes and allow to and dry upside down on clean towels
5. When your jam is cooked put it into hot jars. Close and flip jars upside down to help create a tight seal

*Consume 3 or 4 days after

**Keep opened jars in the refrigerator and unopened in a cool dark space
